Ingredients

  • 1 1/4 lb. baking potatoes
  • 1 Tbs. salt
  • 1/2 Tbs. fresh ground black pepper
  • 1/4 C. olive oil
  • 1 C. Half and Half
  • 1/2 C. chopped fresh chives
  • 4 Tbs. salted butter

Peel potatoes and cut them in quarters. Put the potatoes in a medium saucepan with cold water to cover and salt to taste. Cover and bring to a simmer. Cook 15 minutes or until potatoes are tender when pierced with a knife. Drain potatoes. Dry pan. Add 2 Tbs. olive oil and 1 C. Half and Half, cook over medium heat for 1 minute. Add potatoes and parsley to the pan. Mash the potatoes with a potato masher or hand held blender. Stir them until the consistency is smooth and creamy. Blend with butter. Add the rest of the olive oil and garnish with chives. Serve.
