A traditional favorite, mashed potatoes are a great choice for a dinnertime side dish as they can be paired with just about any type of meat or vegetable. Simple to make, fresh homemade mashed potatoes can definitely leave an impression on your dinner party that boxed mashed potatoes just can’t. Adding fresh chopped chives will send the buttery creamy flavor of your potatoes over the top!

  • 1 1/4 lb. baking potatoes
  • 1 Tbs. salt
  • 1/2 Tbs. fresh ground black pepper
  • 3 Cloves garlic, minced
  • 1/4 C. olive oil
  • 1 C. Greek yogurt
  • 1/2 C. chopped fresh chives
  • 4 Tbs. salted butter

Peel potatoes and cut them in quarters. Put the potatoes in a medium saucepan with cold water to cover and salt to taste. Cover and bring to a simmer. Cook 15 minutes or until potatoes are tender when pierced with a knife. Drain potatoes. Dry pan. Add 2 Tbs. olive oil, minced garlic, and 1 C. Greek yogurt, cook over medium heat for 1 minute. Add potatoes and parsley to the pan. Mash the potatoes with a potato masher or hand held blender. Stir them until the consistency is smooth and creamy. Blend with butter. Add the rest of the olive oil and garnish with chives. Serve.
