Mashed Potatoes with Spinach and Bacon
Serving Size / Yield
- 3 cups Water
- 1 tsp Salt
- 1½ lbs Russet Potatoes, peeled and cut into large chunks
- 3 Tbsp Heavy Cream
- 3 Tbsp Unsalted Butter
- 12 Strips of Bacon
- 2 1/2 cups of Spinach
- Salt & Pepper, to taste
Start by bringing a pot of water to a boil, add salt.
Put in potatoes, return to a boil, then reduce heat and let simmer for 20 minutes.
While that's going start frying your bacon slices.
When done, let cool and start cutting into half an inch pieces.
In a different skillet, add oil to the pan.
Add in spinach and butter and saute for a few minutes.
When potatoes are tender, turn off heat, drain, and put back in the pan.
Mash potatoes until smooth.
Now add in heavy cream and butter, mix together.
Add in bacon and spinach.
