Mashed Sweet Potatoes

This classic recipe is great any time of year, but especially for the holidays. A dash of bourbon really spices the dish up.

  • 3-4 lb. sweet potatoes
  • 1/3 C. brown sugar
  • 1/3 C. buttermilk
  • 1/4 C. bourbon (optional)
  • 1/3 C. butter
  • Salt and pepper to taste

Bake potatoes for about 1 hour at 400 degrees. Allow to cool enough so you can handle them. Slice in half and scoop out pulp. Place pulp in a large saucepan and add remaining ingredients. Cook over low- medium heat for several minutes
