Mashed Sweet Potatoes With Carrots

- 3 1/2 lb. sweet potatoes, cut into 1 1/2" pieces
- 3/4 lb. carrots, cut into 1" pieces
- 3/4 C. whipping cream
- 3 Tbs. butter
Cook sweet potatoes and carrots in separate medium saucepans of boiling salted water for about 25 to 30 minutes or until tender. Drain potatoes and carrots. Return each vegetable to its own pan. Mash potatoes. Stir over low heat to dry slightly for about 2 minutes. Mix in whipping cream and butter. Mash carrots coarsely in pan. Mix into potatoes. Season mixture to taste with salt and pepper.
