Mashed Sweet Potatoes With Praline Topping
Ingredients
- 2 1/2 lb. sweet potatoes, peeled and cubed
- 1/4 C. + 2 Tbs. butter, divided
- 3/4 C. half and half cream
- 1 1/4 C. pecan pieces
- 1 1/2 C. caramel ice cream topping
Directions
Butter casserole dish with 2 Tbs. butter. Set aside. Preheat oven to 325 degrees. Boil sweet potatoes until fork tender. Return to hot pan. Add 1/4 cup butter and half and half. Mash until desired consistency. Spoon into prepared dish. Sprinkle nuts over top. Drizzle caramel topping over nuts. Bake 12-15 minutes, or until nuts are light golden brown. Serve.
