Mashed Sweet Potatoes With Praline Topping

This is a spin-off of the traditional marshmallow topped sweet potato casserole. I think this one is a real stand out and crowd pleaser.

Ingredients

  • 2 1/2 lb. sweet potatoes, peeled and cubed
  • 1/4 C. + 2 Tbs. butter, divided
  • 3/4 C. half and half cream
  • 1 1/4 C. pecan pieces
  • 1 1/2 C. caramel ice cream topping

Directions

Butter casserole dish with 2 Tbs. butter. Set aside. Preheat oven to 325 degrees. Boil sweet potatoes until fork tender. Return to hot pan. Add 1/4 cup butter and half and half. Mash until desired consistency. Spoon into prepared dish. Sprinkle nuts over top. Drizzle caramel topping over nuts. Bake 12-15 minutes, or until nuts are light golden brown. Serve.
