Ingredients

  • 3 handfuls of lettuce, coarsely chopped
  • 1 cup of cherry tomatoes, halved
  • 1 cup of Swiss cheese cubes
  • 1 ½ cups of shredded red cabbage
  • 1 ½ cups of shredded carrots
  • 1 ½ cups of rotini pasta, cooked according to box directions
  • ¾ cup of olive oil
  • ¼ cup of Italian seasoning or other dried herbs
  • 1 tablespoon of mustard seed
  • 1 tablespoon of apple cider vinegar
  • salt and pepper

Directions

In a small dish, whisk together olive oil, Italian seasoning, mustard seed, 1 tablespoon of apple cider vinegar, salt and pepper.
Prep 3 mason jars for packing and evenly distribute the dressing among the jars.
Then layer each jar with pasta, carrots, cabbage, cheese cubes, tomatoes, and lettuce. Close up and store in the fridge until ready to eat.
Shake it well before digging in!
