Mayonnaise Cake

Ingredients
- 2 C. all-purpose flour
- 1 C. sugar
- 3 Tbs. baking cocoa (if making chocolate cake)
- 2 tsp. baking soda
- 1 C. water
- 1 C. mayonnaise (cannot be low-fat or light)
- 1 tsp. vanilla extract
Directions
Preheat oven to 350 degrees. In a large bowl, combine flour, sugar, (cocoa if using), and baking soda. Add water, mayonnaise, and vanilla, and beat until thoroughly combined. Pour into a greased 9" square or 11"x7"x2" pan. Bake at 350 for 30-35 minutes or until cake tests done. Cool. Frost with your favorite frosting: peanut-butter frosting would be great.
