  • 9 red potatoes
  • 2 dill pickles (chopped)
  • 2 celery stalks (chopped)
  • 2 green onions (chopped)
  • 3 Tbs. cilantro (chopped)
  • 2 Tbs. pickle juice
  • 2 tsp. dill weed
  • 1 tsp. paprika
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 C. olive oil
  • 1/2 C. red wine vinegar
  • 1 Tbs. Dijon mustard
  • 1/2 tsp. paprika

Place potatoes in large pot, and cover with water
Boil over high heat, then reduce, cover, and simmer approximately 20 minutes
Drain, and chill potatoes in cool water
Drain again, and cube potatoes
Place potatoes in large bowl and toss with pickles, onions, celery, cilantro, pickle juice, dill, paprika, salt, and pepper
In separate bowl, whisk olive oil, vinegar, and mustard
Pour over potato mixture
Toss to evenly coat all potatoes
Sprinkle with additional paprika before serving
