  • 7 Ounces of Chopped Chorizo
  • 14 Ounce Can of Chopped Tomatoes
  • 14 Ounce Can of Drained Butter Beans
  • 1 Small Diced Onion
  • 3 Cod Filets
  • 1 Teaspoon of Chopped Parsley
  • 3 Minced Cloves of Garlic
  • 1 Teaspoon of Salt
  • 1 Teaspoon of Pepper
  • 1 Tablespoon of Olive Oil

Begin by heating the olive oil in a skillet over a medium heat and letting the garlic and onion cook for 5 minutes. Then, add in the chorizo for a few minutes before adding the tomatoes. Fill the can halfway up with water and pour that into the skillet as well.

Season this mix with salt and pepper and bring it to a boil. Once it’s boiling, add in the cod filets and let them simmer for 5-7 minutes. Finally, mix in the butter beans and simmer for 2-3 more minutes before you sprinkle the parsley on top and serve hot.
