  • 2 C. green lentils
  • 1 C. steamed spinach
  • 4 ½ C. water
  • 2 T. butter
  • 3 cloves garlic, minced
  • 1 onion, diced
  • Salt and pepper to taste
  • ¼ tsp. cumin
  • Olive oil

In a saucepan, melt butter and sauté onion and garlic until fragrant. Pour in water and lentils; bring to a boil and immediately reduce heat to a simmer. Season with salt, cover, and cook until tender. Drain and transfer lentils to a food processor with steamed spinach, cumin, salt, and pepper. Puree and add about ¼ cup of olive oil or more until blending smooth.
