Meat Patties with Zucchini Cheese Stuffing

Ingredients

  • 2 Tbs. Crisco Shortening
  • 1 1/2 C. shredded zucchini
  • 3/4 C. shredded Cheddar Cheese
  • 1/4 C. dry bread crumbs
  • 1 1/4 tsp. salt, divided
  • 2 lbs. ground beef
  • 1/2 tsp. dill weed
  • 1/4 tsp. pepper
  • 1 can (8 ounces) tomato sauce

Directions

Preheat oven to 350 F. Melt Crisco in a large skillet. Add shredded zucchini and cook over medium heat for 3 minutes or until tender. Add cheese, bread crumbs, and 1/4 tsp. salt; mix well. Set aside. Combine ground beef, remaining 1 tsp. salt, dill weed, pepper, and 1/2 C. tomato sauce. Reserve remaining tomato sauce. Press half of ground beef mixture into 8 x 8 x 2-inch pan. Spread zucchini-cheese mixture on top. Shape other half of beef into four square patties and place on zucchini layer. Pour remaining 1/2 C. tomato sauce over meat. Bake uncovered at 350 F for 1-1/2 hours or until thoroughly cooked. Cut into desired serving sizes, lift up with a slotted spoon, and allow the patties to drain slightly. Serve immediately.
