Ingredients

  • 16 oz Can tomatoes (cut up)
  • 1/2 tsp Salt
  • 1/2 tsp Ground coriander
  • 5 oz Jar American cheese spread
  • 24 Freezer Meatballs *
  • 16 oz Can hominy (drained)
  • 2 to 3 Tbs Canned green chili peppers (rinsed, seeded, and chopped)
  • 2 C Corn or tortilla chips ( coarsely crushed)

Directions

In a blender container, combine undrained tomatoes, salt, and coriander. Cover; blend until smooth. Add cheese spread. Cover; blend until smooth. Pour tomato cheese mixture into an oven safe skillet; add Freezer Meatballs, hominy, and chopped green chilies. Bring to boiling, stirring occasionally. Transfer to a 350 F oven. Bake uncovered, for 30 to 35 minutes. Sprinkle with crushed corn chips.
