Meatball Soup

Ingredients
- 1/4 lb. chopped beef
- 1 Tbs. grated roman cheese
- 1/2 slice bread, soaked in water and squeezed dry
- 1 egg yolk
- dash salt
- 1 tsp. parsley
- 2 C. beef broth
- 3/4 C. fine noodles
- 2 Tbs. grated parmesan cheese
Directions
Mix beef, roman cheese, bread, egg yolk, salt and parsley together and shape meatballs, about the size of marbles. Bring broth to a boil, add noodles and meatballs and cook gently about 7 minutes. Serve with grated cheese.
