Ingredients

  • 1 lb. split peas, soaked and strained
  • 2 vegetable bouillon cubes
  • 1 lg. carrot, chopped
  • 2 stalks celery, chopped
  • 1/2 bunch fresh parsley, chopped
  • 1 bay leaf
  • 1/3 C. olive oil
  • 1 pinch sea salt
  • 1 pinch pepper
  • 1 tsp. of dried thyme
  • 7-8 C. of water

Directions

Add all items to a large pot, bring to a boil, and simmer for 3 hours, making sure to stir. Let soup cool for 10 minutes. 

Add cooled soup to blender and process until smooth. 

Serve with a topping of roasted peanuts.
