For all of the Tex-Mex goodness and none of the meat, try zucchini fajitas. This is the perfect cook-out recipe that will keep you grilling all summer long.

  • 6 large flour tortillas
  • 2 large zucchinis, sliced crosswise
  • 2 red pepper, sliced into strips
  • ½ red onion sliced crosswise.
  • 5 small scallions
  • 3 tablespoons extra virgin olive oil
  • ½ cup feta cheese
  • 6 sprigs fresh parsley
  • Garlic salt and pepper to taste

First, lets heat things up. Preheat your grill pan (or grill) to medium-high heat.

Next, prep your veggies. Cut your zucchini, red pepper, onion, and scallions, then brush them over liberally with olive oil. Season with garlic salt and pepper and place on a hot grill.

Now it’s time to cook your veggies, turning them occasionally until they are all slightly softened. Remove from grill and set aside.

Once the grilling’s done, it’s tortilla time. Warm them over a griddle for about 3 minutes on each side.

After cooling, you’re ready to plate and serve. Divide your veggies evenly among your six tortillas. Garnish with fresh basil and feta cheese, then serve.
