This meatloaf has dill pickle juice mixed into the loaf itself and is also glazed in a unique sauce with chopped pickles. Serve with mashed potatoes and green beans for a full meal!

  • ½ cup dill pickle juice
  • 1 egg
  • 1 chopped onion
  • ¾ teaspoon salt
  • ¼ teaspoon pepper
  • 1 pound ground beef
  • 1 slice bread
  • ½ cup chopped dill pickles
  • ¼ cup ketchup
  • ½ teaspoon Worcestershire sauce
  • 1 tablespoon packed brown sugar
  • 2 tablespoons water

Grease a baking dish and preheat the oven to 350 degrees. Beat the egg and whisk in the onion, salt and pepper, and pickle juice. Break the bread into small pieces and stir it in the mixing bowl so that it is soggy. Mix in the ground beef. Form the mixture into a loaf and transfer it to the baking dish. In a separate bowl, stir the ketchup, water, sugar, Worcestershire sauce, and chopped pickles. Pour this over the meatloaf and bake for 1 hour.
