  • 3 lb. carrots, sliced
  • 1/2 C. honey
  • 1/4 C. chicken broth
  • 2 T. red wine vinegar
  • 1 1/2 lb. ground beef
  • 1 slice white bread, crumbled
  • 1 egg
  • 1 small onion, chopped
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 4 T. ketchup
  • 1/2 C. half-and-half

Preheat your oven to 350°F and lightly grease a casserole dish. In a large bowl, mix together beef, crumbled bread, egg, onion, salt, pepper, ketchup, and half-and-half. Use your hands to fully incorporate all ingredients. Form meat mixture into a loaf and transfer to your prepared baking dish. In another bowl, combine carrots with honey, broth, vinegar, salt, and pepper. Toss to coat. Arrange carrots around meatloaf in the baking dish. Bake for one hour, stirring the carrots occasionally. Let stand for 10 minutes before serving.
