This is a delicious recipe for Bulgarian meatloaf!

  • 2 lb. ground beef
  • 1 lb. ground pork
  • 1 lg. onion, finely chopped
  • 1/2 tsp. ground cumin
  • 1 tsp. sweet paprika
  • 3/4 tsp. sea salt
  • 1 tsp. ground pepper
  • 2 slices dry French bread with crust removed, moistened and squeezed dry
  • 1 lg. egg
  • 2 carrots, cut in 1/2 lengthwise, steamed
  • 2 hard-boiled eggs
  • 1/2 C. club soda

In a bowl, mix meat, seasoning, onion, bread, egg and club soda. In the baking pan, spread 1/3 of the meat, place in the center the hard boiled eggs in a row, place 2 of the carrot pieces alongside the eggs. Add on top the second third of the meat and the last 2 carrot sticks above the first ones. Top with the rest of the meat. Bake at 350 degrees in a preheated oven until a fork-pierced loaf releases clear juice (about 45 minutes).
