Ingredients

  • 1 lg. clove garlic, pressed
  • 1 C. onion, chopped
  • 1 1/2 C. green pepper, chopped
  • 1 1/2 C. mushrooms, sliced
  • 1 Tbs. olive oil
  • 1 1/2 lbs. chicken breasts, skinned and boned
  • one 28-oz. can crushed tomatoes
  • one 28-oz. can whole peeled tomatoes, cut into quarters
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 1 Tbs. dried marjoram
  • 1 Tbs. dried parsley
  • 1/2 tsp. ground allspice
  • 1/4 C. white wine
  • 2-4 Tbs. tomato paste

Directions

Saute garlic, onion, green pepper, and mushrooms in olive oil.  Add all the other ingredients except wine and tomato paste.  Simmer until chicken is cooked thoroughly, about 45 minutes.  Remove chicken and pull apart with 2 forks to shred into bite-sizes pieces.  Return chicken to sauce along with wine and tomato paste and cook to desired consistency.  Simmer to heat before serving.  Serve over pasta or rice.
