  • 1/4 C. flour
  • 1 tsp. basil leaves
  • 1 tsp. garlic salt
  • 1/2 tsp. oregano leaves
  • 1/2 tsp. rosemary leaves
  • 1/4 tsp. pepper
  • 1 1/2 lb. boneless, skinless chicken breasts
  • 2 Tbs. oil
  • 1 large onion, cut into wedges
  • 1 large green pepper, cut into strips
  • 1 (14 1/2 oz.) can diced tomatoes, undrained
  • 1/2 C. chicken broth

Mix the first six ingredients in a shallow bowl and reserve 2 Tbs. Coat the chicken evenly with the spice mixture. Heat the oil in a skillet and add the chicken. Cook on 3 minutes per side. Remove the chicken from the skillet and add the onion and pepper. Cook and stir for 5 minutes. Stir in tomatoes, broth, and 2 Tbs. flour mixture. Bring to a boil while stirring frequently. Return the chicken to skillet and reduce the heat to low. Cover and simmer for 10 minutes, or until chicken is cooked through.
