  • 4 green bell peppers, tops and seeds removed
  • ½ C. couscous
  • ½ C. boiling water
  • ¼ C. pine nuts, toasted
  • 1/3 C. feta cheese, crumbled
  • ½ C. sun-dried tomatoes, finely chopped
  • 2 T. basil, shredded

Preheat oven to 350 degrees. In a bowl, cover couscous with boiling water, stir, cover, and set aside for 10 minutes. Microwave green bell peppers on a plate for 5 minutes to soften up and transfer to a baking sheet. Use a fork to stir couscous and mix in pine nuts, feta, tomatoes, and basil. Stuff peppers with couscous and bake for 10 minutes.
