  • 8 potatoes, peeled and sliced
  • 2 tomatoes, sliced
  • 2 onions, sliced
  • 2 scallions, sliced
  • 1 carrot, sliced
  • ½ cup fresh basil, chopped
  • 2 teaspoons dry basil
  • 1 teaspoon paprika
  • ¾ teaspoon salt
  • 2/3 teaspoon pepper
  • ½ cup olive oil

Combine all the ingredients in a bowl, reserving a handful of potatoes to go on top. Arrange the mix into the crockpot and then top with the potatoes that you set aside. Cook covered for 2 hours, or until soft. Preheat the oven to 400F. Transfer contents of crockpot to a baking dish and broil for 5-7 minutes to toast the potatoes. Let sit for 10 minutes before pulling the casserole out of the oven.
