1 can tuna fish, in water, drained 1 cup cucumber, sliced ½ stalk celery, chopped ¼ cup Kalamata olives, sliced 1 medium red onion, chopped 1/2 cup olive oil, 2 tsp lemon zest 3 tbsp lemon juice cup Salt & pepper to taste

  • 1 can tuna fish, in water, drained
  • 1 cup cucumber, sliced
  • ½ stalk celery, chopped
  • ¼ cup Kalamata olives, sliced
  • 1 medium red onion, chopped
  • 1/2 cup olive oil,
  • 2 tsp lemon zest
  • 3 tbsp lemon juice cup
  • Salt & pepper to taste

Directions

In a large serving bowl, toss together tuna, cucumber, celery, olives, and onion. In separate bowl, whisk together the olive oil, lemon zest, and lemon juice. Pour over salad and toss. Add salt & pepper to taste. Serve immediately or refrigerate until served.
