Mediterranean Rice Pilaf

This is such an interesting recipe! It's a pilaf, but it also includes apricots and raisins!

  • 2 tsp. oil
  • 1 med. onion, chopped
  • 1 13 3/4-oz. can chicken broth
  • 1/2 tsp. pumpkin pie spice or ground cinnamon
  • 1 tsp. curry powder
  • 2 1/4 C. instant brown rice, uncooked
  • 1/4 C. chopped, dried apricots
  • 1/4 C. raisins

Heat oil in medium-high heat. Add onion. Cook and stir until tender. Stir in broth and spices. Bring to a boil. Stir in rice, apricots and raisins. Return to a boil. Reduce heat to low. Cover and simmer 5 minutes. Remove from heat and stir. Cover. Let stand 5 minutes. Fluff with fork.

Serve with: Lasagna
