  • 4 lb. bone-in chicken parts
  • 1 lb. baby potatoes, halved
  • 1/2 onion, sliced
  • 2 lemons, one sliced and one juiced
  • 1/3 C. plus 3 T. olive oil, divided
  • 2 cloves garlic, minced
  • 1 tsp. Italian seasoning
  • 1/2 tsp. paprika
  • salt and pepper to taste
  • 1 C. Roma tomatoes
  • 1 tsp. oregano

Preheat your oven to 400°F and lightly grease the inside of a 13x9-inch roasting dish. Arrange chicken, potatoes, onion, and lemon slices in the prepared pan. Sprinkle with minced garlic. In a small bowl, whisk together remaining ingredients. Drizzle evenly on top of chicken mixture and generously season with salt and pepper. Bake for 40 minutes. Meanwhile, combine oregano with three tablespoons of olive oil in a small bowl. Add tomatoes and toss to coat. After 40 minutes of roasting, carefully place the marinated tomatoes in the pan and continue to cook for 20 minutes. Let stand for five minutes before serving.
