Ingredients

  • 1 med. tomato, seeded and chopped
  • 1 scallion, chopped
  • 1/2 cucumber, peeled, seeded and sliced paper-thin
  • 2 Tbs. minced green bell pepper
  • Dressing:
  • 1 1/2 Tbs. plain nonfat yogurt
  • 2 1/4 tsp. lemon juice
  • 1/8 tsp. minced garlic
  • 1/4 tsp. ground cumin
  • 1 tsp. fresh mint, shredded, plus extra for garnish
  • 1/8 tsp. salt, optional
  • freshly ground pepper to taste

Directions

In a medium bowl, combine tomato, scallion, cucumber and bell pepper.

In a small bowl, mix together dressing ingredients. Toss with vegetables and serve.
