- 1 med. tomato, seeded and chopped
- 1 scallion, chopped
- 1/2 cucumber, peeled, seeded and sliced paper-thin
- 2 Tbs. minced green bell pepper
- 1 1/2 Tbs. plain nonfat yogurt
- 2 1/4 tsp. lemon juice
- 1/8 tsp. minced garlic
- 1/4 tsp. ground cumin
- 1 tsp. fresh mint, shredded, plus extra for garnish
- 1/8 tsp. salt, optional
- freshly ground pepper to taste
In a medium bowl, combine tomato, scallion, cucumber and bell pepper.
In a small bowl, mix together dressing ingredients. Toss with vegetables and serve.
