This salad is great for people watching their weight, as it's very healthy! The dressing is also very light and won't pile on unnecessary calories.

  • 1 Tbs. garlic powder
  • 1 tsp. oregano
  • 2 tsp. dry mustard
  • 1/3 C. apple cider vinegar
  • 1 tsp. kosher salt
  • 1 tsp. black pepper
  • 1/2 C. olive oil
  • 1 lb. feta, cubed
  • 2 cucumbers, sliced thin lengthwise (using a mandolin)
  • 3 C. cherry tomatoes, halved
  • 1 red onion, sliced thin (using a mandolin)
  • 2 bell peppers, julienned
  • 1 head romaine, chopped
  • 1 Tbs. rosemary, chopped

Mix the first 7 ingredients together and refrigerate. 

In a large bowl, add the Romaine, cucumbers, tomatoes, onion, bell peppers, and top with the cubed feta and rosemary. 

Drizzle with vinaigrette and serve immediately.

  • Hi femalto, Kalamata olives are my personal favorite to add to the salad. Personally, I like to add chickpeas into the salad for some extra flavor! Thanks for the tips, love hearing tweaks to the recipes!

  • This is a great starter. If you will note, the picture shows olives added, which are not included in the directions. Adding olives makes this salad pop. I also changed the vinegar to lemon juice, fresh squeezed. Better flavor.
