  • 4-6 cloves garlic, minced
  • 2 T. butter
  • 4 oz. mushrooms, sliced
  • ½ C. black lentils
  • 1 (32 oz.) can vegetable broth
  • 2 carrots, peeled and chopped
  • Salt and pepper to taste

In a large pot, melt butter and sauté garlic until fragrant. Add in mushrooms and sauté for 3 to 5 minutes. Pour in broth and add in lentils and carrots. Bring soup to a boil, reduce heat, and simmer for 20 minutes until everything is tender. Season with salt, pepper, and any additional seasonings you prefer.
