Ingredients

  • 2 ½ C. milk
  • 16 oz. elbow macaroni
  • 1 ½ C. Parmesan cheese, shredded
  • 1 ½ C. cheddar cheese, shredded
  • 1 (15 oz.) can pumpkin puree
  • 1 can evaporated milk
  • 4 oz. cream cheese, softened
  • 1 T. butter
  • 1 shallot, diced
  • Dash nutmeg
  • Salt and pepper to taste
  • 2 tsp. dry mustard powder

Directions

In a skillet, melt butter and sauté shallot until translucent. In a heavily greased crockpot, add in all ingredients. Cook on low for 3 to 4 hours, stirring occasionally, until pasta is tender.
