  • 3 Cups of Heavy Cream
  • 1 Cup of Whole Milk
  • ¾ Cup of Sugar
  • 2 Tablespoons of Vanilla Extract
  • 1 Pinch of Salt
  • 5 Large Egg Yolks
  • 4 Tablespoons of Bourbon
  • ¼ Cup of Chocolate Pieces

To begin, fill a large bowl about halfway with ice water and then set a smaller bowl to float in this water, filling it with 1 cup of heavy cream and setting a strainer on top. Then, whisk the egg yolks together in a separate bowl.

In a saucepan over a medium-high heat, mix together the remaining 2 cups of the heavy cream with the milk, sugar, and salt. Stir occasionally until bubbles begin to form -- around 3-5 minutes. Pour half of this mixture into the egg mix while you constantly whisk everything together, and then return the egg and cream mixture to the saucepan to continue cooking over a low heat.

Continuously stir this mixture until it thickens and the temperature reads around 175 degrees Fahrenheit. Then, quickly strain this into the heavy cream in the ice water and stir in the vanilla extract and the bourbon. Once the temperature cools to around 60-65 degrees Fahrenheit, let this mix cool in your fridge for at least 3-5 hours before putting it into your ice cream maker and following the manufacturer’s instructions.

Once the bourbon ice cream is made, begin building your sundae in a dish. Fold the chocolate pieces into the ice cream with a spoon, then top with as many cherries as you’d like. Enjoy!
