Mexicali Pepper Muffins

Instead of cornbread, try these muffins with peppers, corn and chili powder – perfect for a Mexican feast.

Ingredients

  • 1 C. yellow cornmeal
  • 1 C. flour
  • 2 Tbs. sugar
  • 1 Tbs. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. chili powder
  • 1/2 tsp. dried basil
  • 1/4 C. green peppers, finely chopped
  • 1/4 C. yellow peppers, finely chopped
  • 1/4 C. red peppers, finely chopped
  • 1/4 C. frozen corn, thawed
  • 1/4 C. margarine
  • 1 C. milk
  • 2 eggs

Grease muffin cups. Stir together cornmeal, flour, sugar, baking powder, salt, chili powder and basil. Set aside. Sauté peppers and corn in margarine for about 3-4 minutes. Beat together milk and eggs. Mix together pepper-corn mixture and milk mixture with flour mixture. Bake at 400 degrees for 15-20 minutes until golden.
