Mexican Asparagus and Cheese Tortillas

We put in a little over an acre veggie garden every spring, plus last year we put in a separate herb garden. My husband and I both love gardening, and to us it really is not work at all. We have a shop down from our house. We grow our own asparagus and it is so nice to pick fresh asparagus, heat the grill up and make Mexican asparagus and cheese tortillas! Can't get better than that! This Spring we are putting in more asparagus plants....over 50!

Ingredients

  • 4 yellow corn tortillas
  • 16 pieces asparagus, grilled
  • 1/4 C. Monterey Jack cheese, shredded
  • 1/4 C. white Cheddar cheese, shredded
  • salt and pepper, to taste
  • olive oil, for brushing

Directions

Prepare grill. For each taco, spread one quarter of the cheeses and 4 pieces of the asparagus on each tortilla, then season with salt and pepper. Fold in half and lightly brush the outside with olive oil. Grill for 3 minutes on each side or until the tortilla is crispy and cheese has melted.
