  • 1 lb. ground beef
  • 1 can Ro-Tel
  • 1 bell pepper chopped
  • 1/2 onion, or more if you prefer
  • 1 Tbs. chopped garlic
  • 3/4 tsp. cumin
  • 4 eggs
  • 1 C. shredded cheddar cheese

Directions

Heat large iron skillet and brown the ground beef. Drain off fat. Add pepper, onion and garlic. Cook until the onions are soft. Add Rotel and cumin. Cook for 2 1/2 minutes, covered. In the mixture, make 4 small pools and add 1 egg to each pool. Cook for 5 min. covered or until eggs are poached well. Add cheddar cheese to the top cover and cook 1 min. until cheese is melted.

Yield: 4 servingsĀ
