  • 1 tomato, chopped
  • 1 tsp. oregano leaves
  • 1/2 tsp. chili powder
  • 1/4 tsp. salt
  • 1 Tbs. flour
  • 2 chicken breasts, skinned and boned
  • 2 tsp. oil
  • 1 1/4 C. onion, thinly sliced
  • 1 clove garlic, minced
  • 2 C. green bell pepper, sliced
  • 2 tsp. cilantro, chopped

Mix tomatoes, oregano, chili powder and salt. Cut chicken into 1/2-inch strips, roll in flour and mix into tomato mixture. Set aside to marinate for a few minutes. Heat 1 tsp. oil in frying pan and sauté onion and garlic for 3 to 5 minutes. Add green bell pepper and continue cooking for 4 to 5 minutes. Remove from frying pan and warm. Heat 1 tsp. oil in frying pan and sauté chicken. Mix chicken with vegetables. Sprinkle with cilantro. Serve with warm tortillas.
