Mexican Chicken Pot Pie

This recipe adds cornbread to the mix for a breadier pot pie.

  • 3 C. cooked diced chicken
  • 1 20 oz. jar of salsa
  • 1 can corn, drained
  • 2 C. shredded cheddar cheese
  • 1/2 C. sour cream
  • 2 tsp. cumin
  • 1 tsp. garlic powder
  • 1 box of Jiffy corn bread mix

Cook chicken and dice. Add the salsa, corn, cheese, mix well. Pour ingredients into a lightly sprayed pie plate. Mix the corn bread according to the directions;(or mix from scratch) with the sour cream, cumin and garlic powder. Put the cornbread mixture on top of the chicken mixture. Bake until cornbread is done at the temperature called for on the box of cornbread mix.
