Mexican Chicken Strata

This Mexican Chicken Strata is one of our favorite breakfast or brunch dishes. I'm sure it will become one of your favorites also!

Ingredients

  • 4 slices white sandwich bread
  • 1 1/2 - 2 C. cut up chicken
  • 1 sm. can green chilies, drained
  • 1/2 C. salsa
  • 1 1/2 C. shredded cheddar or Mexican blend cheese
  • 2 C. half-and-half (can use fat-free)
  • 4 eggs
  • 1/2 C. milk
  • 1 sm. onion, chopped finely
  • 1-2 seeded and chopped jalapenos
  • 1 tsp. prepared mustard
  • 1/2 tsp. salt
  • 1/8 tsp. ground red pepper

Directions

Trim the crusts from bread. Grease an 8x8-inch baking pan. Line the bottom of the pan with the bread, trimming it as necessary to fit. Cut the trimmings into small cubes and scatter over the top of the bread along with the chicken, green chilies, salsa and 3/4 cup shredded cheese. Whisk together in a bowl until thoroughly blended the half and half, eggs, milk, onion, jalapeno, mustard, salt and pepper. Drizzle over the bread. Let stand for 20 minutes, or cover and refrigerate for up to 2 hours. Preheat oven to 325 degrees. Sprinkle the top of the strata with the remaining cheese. Bake until a knife inserted in the center comes out clean, about 1 hour. Let stand for 10 minutes. Cut into squares.
