Mexican Crockpot Chicken Fajitas
Serving Size / Yield
- 1 medium red bell pepper, sliced
- 1 medium onion, sliced
- 1 packet taco or fajita seasoning
- 1 lb. skinless, boneless chicken breasts
- 1/2 C. chicken broth
- 6-8 flour tortillas
Add the pepper and onion to the bottom of the crockpot. Sprinkle taco or fajita seasoning over the pepper and onion. Add chicken and broth to the crockpot.
Cook on high for three hours.
Remove chicken from the pot and let it cool slightly. Use two forks to shred the chicken, then put it back into the pot to mix with peppers and onions.
Serve with tortillas.
