Mexican Deviled Eggs

A twist on deviled eggs with salsa and cheddar cheese. Add a chopped jalapeno for more spice.

  • 8 hard-cooked eggs
  • 1/2 C. shredded Cheddar cheese
  • 1/4 C. mayonnaise
  • 1/4 C. salsa
  • 2 Tbs. sliced green onions
  • 1 Tbs. sour cream
  • Salt, to taste

Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with cheese, mayonnaise, salsa, onions, sour cream and salt. Stuff into egg whites. Refrigerate.

Makes 16 servings.
