Mexican Eggs

I like to make this as a change of pace for breakfast. It makes a great supper also.  This recipe is great because it can be so easily adjusted to your own tastes.

  • 1 lb. ground beef, chuck or sausage
  • 8-10 eggs
  • 1 dash milk
  • 1 sm. onion
  • 2-3 handfuls Frito chips
  • 3/4 Tbs. cumin powder
  • salt and pepper to taste
  • salsa and/or Tabasco sauce (optional)

Fry meat and chop onions. Add cumin powder salt, pepper and onions to meat while it is cooking. Drain. Scramble eggs and milk then add to meat and onions. Cook until eggs are done. Crunch up the Fritos and add to pan. Mix well. Serve with salsa or Tabasco sauce.
