  • 1 3 lb. broiler-fryer, cut up
  • 1 egg, beaten
  • 1 C. buttermilk
  • 1/3 C. all purpose flour
  • 1/3 C. corn meal
  • 1 1 3/4 oz. pkg. chili seasoning mix
  • Vegetable oil

Place chicken in shallow pan. Combine beaten egg and buttermilk, stirring well; pour mixture over chicken. Cover and chill for 30 minutes. Combine flour, cornmeal, and chili seasoning mix in a plastic bag; shake to mix. Place 2 pieces of chicken in bag, and shake to coat. Repeat procedure with remaining chicken. Place chicken in a shallow dish; cover and refrigerate 30 minutes. Heat oil in large skillet to 325 degrees; add chicken, and fry 20-30 minutes or until done, turning once. Drain on paper towels.
