Mexican Fried Rice

This rice dish can be used as side dish or added to other dishes.

  • 1 C. longrain white rice
  • 2 C. water (or beef stock)
  • 1/2 C. chopped bell pepper
  • 1/2 C. chopped onion
  • 1 pkg. chili seasoning
  • dash of salt and pepper to taste
  • 1 tsp. cooking oil

Heat oil in frying pan. on high -medium high heat. Watch for the rippling oil in the pan. Add your rice to the oil, stir with wooden spoon constantly until it starts to brown s a little (don't turn away because it will burn really fast at this point). After it's browned a little, add your onions, peppers, and water or stock a little at a time until all the liquid is poured into the pan. It'll start to boil right away. Turn it down to a simmer and cover for 15 minutes until liquid has evaporated. You can add this to my Mexican Goulash dish in the budget section.
