Ingredients

  • 2# of ground beef. chicken or turkey
  • 1 medium onion/chopped
  • 1 large bell pepper/chopped
  • 1 jalopeno /finely chopped
  • 1c long grain cooked rice
  • 1 large can of mexican style tomatoes
  • 1 can corn
  • 1 can of ranch style beans
  • 2pkgs. chili seasoning
  • Ic water(maybe a little more if needed)
  • 1Tbs. olive oil or vegetable oil

Directions

Cook your meat over medium to medium high heat until cooked through, drain put back in pan and add your tomatoes, drained corn, beans. to avoid any kind of burning add some water to this mixture the rice will soak up any liquid that might ruin the dish. In a small saute pan cook onions and bell pepper in oil until tender.Add to meat mixture. Add chopped jalopeno( the jalopeno is optional if you're feeding this to kids). You can cook rice 1 of 2 ways, either the method suggested on the package,or you can fry it in a pan(optional). This will be in another sides section.After the rice is cooked add to your meat mixture stir. Let simmer for about 10 minutes or until liquid is soake up by the rice...Serves many...Tastes great with flour tortillas, or tortilla chips...
