Mexican-Inspired Enchilada Casserole

- 1 pkg. corn tortillas
- 1 1/2 can enchilada sauce
- 1 1/2 can refried black beans
- 8 oz. shredded cheddar cheese
- 1 lb. ground beef
- 1 yellow onion, diced
- 1 red jalapeno pepper, diced with seeds and membrane
Preheat the oven to 375 degrees. Heat the enchilada sauce in a small saucepan until warm. In a large skillet, cook the ground beef, onion, and jalapeno and cook until meat is cooked through. Drain the grease, if necessary.
Grease a baking dish and layer 4 tortillas in the bottom. Pour a ladle of enchilada sauce over the tortillas. Add 1/2 can refried beans and spread them out a bit. Top the beans with 1/3 of the meat mixture. Sprinkle with some cheese. Repeat until you run out of ingredients.
Bake for 30 to 35 minutes, or until the cheese is bubbly. Top with green onions and tomatoes before serving.
