A traditional Italian dish has been given a Mexican twist. This lasagna's ground beef filling mixed with select herbs and spices has been stuffed between layers of flour tortillas and sprinkled on top with a Mexican cheese blend.

  • 1 Tbs. Olive Oil
  • 1 lb. Lean Ground Beef
  • 1 Medium Onion, diced
  • 4 Medium Tomatoes, chopped
  • 2 Garlic Cloves
  • 1 tsp. Sea Salt
  • 1 tsp. Ground Black Pepper
  • 2 Tbs. Lime Juice
  • 1 tsp. Dried Cilantro
  • 1 tsp. Ancho Chili Powder
  • 1 15 oz. container Ricotta Cheese
  • 1 C. Shredded Mexican Cheese Blend, divided
  • 1 Large Egg
  • 10 8" Tortillas

Preheat oven to 350 degrees. Spray a 9x13" baking dish with nonstick cooking spray. Warm the olive oil in a large skillet over medium-high heat. Add the ground beef and cooked until browned. Drain the meat. Add the onion, tomatoes, garlic, salt, pepper, lime juice, cilantro, and ancho chili powder. Let mixture simmer for 15 minutes. Meanwhile, in a large bowl, combine the ricotta cheese, 1/4 cup of the Mexican cheese blend, and the egg, and set aside. Trim the tortillas to fit the baking dish. Cover the bottom of the prepared dish with two tortillas. Spread across the tortillas 1/3 of the meat mixture. Layer two more tortillas atop the meat mixture, and spread 1/2 of the cheese mixture atop them. Repeat the layering process, ending with the third layer of the meat mixture on top. Over this, sprinkle the remaining Mexican cheese blend. Cover with foil. Bake for 40 minutes, then uncover and bake for another 5 minutes until casserole is bubbly and golden-brown.
