  • 2 tbsp. extra virgin olive oil
  • 2 tomatoes, chopped
  • 1 red onion, chopped
  • 2 garlic cloves, chopped
  • 1 cup low-sodium chicken broth
  • 2 cups tomato juice
  • 1 tsp. ground chili pepper
  • 1/3 cup lime juice
  • ½ cup cilantro

Place tomatoes, onions, and garlic in a food processor and process until mixture is smoothed. In a large pot over high heat, pour in tomato mixture and over. Allow about 5 minutes of cook time. After 5 minutes, pour in chicken broth, lime juice, chili pepper, and tomato juice. Stir until all ingredients are thoroughly combined. Allow about 25 more minutes of cook time. Serve with cilantro garnish.
