Mexican Potatoes
Ingredients
- 4 to 5 medium potatoes
- 1/4 C. finely chopped onions
- 1/2 C. half & half
- 1/4 C. chopped pimentos
- 1/4 C. chopped green peppers
- 1 C. mayonnaise
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 C. grated American cheese
- 1/2 to 3/4 C. of grated American cheese
- 1/2 C. chopped green and black olives
Directions
Boil potatoes; peel, cool, and slice medium thick. Combine onions, pimentos, green peppers, half & half, mayonnaise, salt, pepper, and cheese. Pour over potatoes and mix thoroughly. Butter bottom and sides of a shallow 9x13 baking dish. Place potato mixture in dish. Sprinkle top with cheese and olives. Bake in 375 F oven for 20 to 25 minutes.
