Mexican Potatoes

Mexican Potatoes

A great side to Mexican steak or grilled chicken.

Ingredients

  • 4 to 5 medium potatoes
  • 1/4 C. finely chopped onions
  • 1/2 C. half & half
  • 1/4 C. chopped pimentos
  • 1/4 C. chopped green peppers
  • 1 C. mayonnaise
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 C. grated American cheese
  • 1/2 to 3/4 C. of grated American cheese
  • 1/2 C. chopped green and black olives

Directions

Boil potatoes; peel, cool, and slice medium thick. Combine onions, pimentos, green peppers, half & half, mayonnaise, salt, pepper, and cheese. Pour over potatoes and mix thoroughly. Butter bottom and sides of a shallow 9x13 baking dish. Place potato mixture in dish. Sprinkle top with cheese and olives. Bake in 375 F oven for 20 to 25 minutes.

Serves 6.
