Mexican Quiche
Ingredients
- 1/4 C. of chopped jalapeno peppers
- 3/4 C. of grated cheddar cheese
- 6 eggs
- Lemon pepper to taste
Directions
Sprinkle jalapeno peppers in greased 8" pie plate. Top with cheese. Combine eggs with salt and lemon pepper to taste in bowl. Beat with fork until smooth. Pour over cheese and peppers. Bake at 350ºF. for 25 minutes or until set. Cut into wedges. Makes 6 servings.
