  • 1 C. uncooked white rice
  • 1 can chicken broth
  • 1 C. sour cream
  • 1 can diced green chile peppers
  • 1/2 tsp. paprika
  • 1 C. shredded Monterey Jack cheese, divided
  • 1/4 C. chopped cilantro
  • salt and pepper, to taste

Bring the rice and chicken broth to a boil and simmer for 20 minutes. Preheat the oven to 350 degrees and prepare a casserole dish. Mix the sour cream, green chile peppers, paprika, 1/2 cup cheese, and cilantro into the cooked rice. Season with salt and pepper. Transfer the mixture to the baking dish and top with the rest of the cheese. Bake for 30 minutes until bubbling. Top with extra sour cream if desired.
