Mexican Salsa Potatoes

A very simple and easy way to serve up Mexican style potato skins.

Ingredients

  • 1 C. Velveeta cheese, cubed
  • 1/2 C. of your favorite salsa
  • 1/2 C. ground beef, browned and crumbled
  • 4 baked potatoes

Directions

In microwave, heat the cheese and salsa till melted and smooth. Stir cheese sauce into cooked meat. Split each potato; fill with meat mixture. Garnish with sliced green onions.
