Mexican Salsa Stuffed Hamburger

Ingredients
- 1 1/4 lbs. ground beef
- 1/2 c. plain bread crumbs
- 1 Tbs. canned chipotle chilies in adobo sauce, chopped
- 1/2 C. frozen corn
- 2 Tbs. chunky salsa
- 1 Tbs. fresh cilantro, chopped
- 1/2 tsp. salt
- 4 slices pepper jack cheese

Directions
Heat up the grill. Combine the beef, chilies and bread crumbs in a medium bowl and mix well. Roll the beef mixture into 4 balls and press your thumb into the center of each without poking all the way through to create the pocket.
In another bowl, combine the corn, salsa, cilantro and salt. Pour in about 2 tablespoons of this mixture into the pockets in the beef balls and seal the edges. Flatten the balls into 4 patties.
Grill your stuffed burgers for 12-16 minutes flipping once halfway through. With a minute left to cook, place the cheese ontop of each burger and let melt. Enjoy!
